Ashtyn Asay Meximodo, a popular Mexican restaurant known for its extensive tequila selection and lively atmosphere, is expanding across the Garden State. The restaurant, which currently operates at 5 Pearl Street in Metuchen and 25 Christopher Columbus Drive in Jersey City, is planning to open three additional locations in Parsippany, Montgomery Township, and Marlboro. While specific opening dates and addresses for the upcoming locations have not yet been announced, all three restaurants are expected to open by October 2027. Here’s what we know so far.
Meximodo’s NJ Expansion
According to a report from New Jersey Monthly, Meximodo’s planned expansion will bring three new restaurants to Parsippany, Montgomery Township, and Marlboro, with all locations slated to open by October 2027. Additional details about the individual projects, including exact addresses and anticipated opening dates, have not yet been shared.

The expansion will grow Meximodo’s New Jersey footprint beyond its existing restaurants in Metuchen and Jersey City. The restaurant is known for its contemporary take on Mexican cuisine, extensive tequila selection, and lively dining atmosphere.
Representatives from Meximodo did not immediately respond to a request for comment.

Founded by New Jersey restaurateur Saurabh Abrol, Meximodo was created in 2021 as a family-friendly celebration of Mexican food and culture. The restaurant opened its first location in Metuchen in November 2023, followed by a second location in Jersey City in 2025.
