Edgewater is getting a new waterfront dining spot, and the team behind it may already be familiar to New Jersey food lovers. The owners of Blu on the Hudson in Weehawken and Blu Livingston are planning a sister concept at 115 River Road, taking over the former Pier 115 space along the Edgewater waterfront. The new restaurant appears to be called Cove by Blu. Read on for what we know so far about Cove by Blu coming to Edgewater, New Jersey.
What We Know About Cove by Blu
Blu on the Hudson recently teased the project on Instagram, sharing a video of the waterfront space at 115 River Road with the message “coming soon from the team behind Blu.” The new restaurant is expected to take over the former Pier 115 Bar + Grill space, a longtime Edgewater spot at the same address. Blu Hospitality Group is the team behind Blu on the Hudson at 1200 Harbor Boulevard in Weehawken and Blu Livingston at 277 Eisenhower Parkway in Livingston.

Full menu details for the Edgewater restaurant have not yet been announced, but Blu’s existing locations give a good sense of what may be on deck. The current menu at both Blu locations includes seafood, sushi rolls, house-made pastas, steak, branzino, cocktails, and more.
What Used to Be at 115 River Road
Before Cove by Blu, 115 River Road was home to Pier 115 Bar + Grill, a longtime Edgewater waterfront restaurant known for Hudson River views, casual bites, sushi, drinks, and a lively going-out scene. Pier 115, LLC filed for Chapter 11 bankruptcy in the District of New Jersey on March 12th, 2025. The case was later dismissed on April 28th, 2025, and terminated on June 24th, 2025. Pier 115 was a familiar name for many Edgewater locals, especially for waterfront meals and Manhattan skyline views. Now, the arrival of a new Blu concept means the riverfront address will once again be home to a dining destination.
