The Origins of Canton Rodeo

Canton Rodeo is founded by Chef Connie Chung (Eleven Madison Park), Fung Lam (Hillstone Restaurant Group), and Matthew Kann (investment in Banza, Cocojune + Playa Bowls). Previously, Connie has worked as a chef at Eleven Madison Park in New York City. Canton Rodeo has multiple sources of inspiration, looking towards the cuisine of Hong Kong, multiple Chinatowns across the globe, and traditional Cantonese barbecue shops.

The Menu

The menu is centered around slow-roasting meats, such as the Char Siu Pork and Honey Roast Duck specials that will be featured. Furthermore, guests can build their own Canto Box, which is their choice of meat with white or fried rice, or lo mein noodles and a vegetable side. Or they can choose the Canton Rodeo Special, which is a selection of slow-roasted proteins served on top of vegetables and sauce. It also features a dessert menu which includes matcha + strawberry and cream lychee soft serve.

The Design

The restaurant’s interior design, led by Chris Johnson of Studio Johnson, is meant to reflect the American suburbs of its setting and Hong Kong BBQ shops and Cha Chaan Tengs (Hong Kong diners). The restaurant mirrors Hong Kong BBQ imagery with meat hanging from the windows and on chopping boards, while incorporating the cowboy and rodeo motif tied to its name. The open kitchen will allow guests to watch the slow-roasting process. To further bring in the American suburb element, the restaurant will have custom-made wallpaper with characters painted by a local art teacher from Paramus High School.
