The brothers behind Amano Pizza, an award-winning pizzeria with two Jersey Shore locations, are starting a new chapter with The Proof Pizzeria in Wall Township. Wall residents can look forward to sourdough pizza made with 48-hour fermented dough and clean-label ingredients,. What To Expect at The Proof Pizzeria
The Proof Pizzeria will soon open at 1919 NJ-35, Suite 300, in the Wall Promenade shopping center. It will take over the former location of Frutta Bowls and be in the same building as Twin Boro Physical Therapy and Salad House. The shopping center houses a large parking lot along with various other businesses such as Starbucks, Club Pilates, and ALDI.

According to the business, The Proof Pizzeria focuses on using clean, premium ingredients while staying true to the traditions rooted in the owners’ Italian heritage. The pizzeria lists naturally leavened sourdough, unbleached flour, clean-label products, and a 72-hour fermentation process as key elements in creating the crisp, flavorful pies that have become popular with locals at Amano Pizza.
“We couldn’t be more excited to call Wall Township our new home. With its strong sense of community, local pride, and close connection to the Jersey Shore, Wall feels like the perfect place for this next chapter,” The Proof Pizzeria said in a Facebook post.
The Brothers Behind the Pizza
The Proof Pizzeria is the latest venture from brothers John and Anthony Lomonaco, who have already made a name for themselves in the Jersey Shore pizza scene through Amano Pizza.
Anthony finished first in the Northeast region and seventh in the world at the 2026 Pizza Expo in Las Vegas. The International Pizza Expo is the pizza industry’s largest annual trade show and conference, bringing together pizzeria owners and professionals for competitions, seminars, and networking.
The brothers’ journey into the pizza industry began by learning the craft from their father. First-generation Italian Americans with Brooklyn roots, John and Anthony entered the pizza industry in 2017 with the opening of their first Amano Pizza location in South Amboy. Since then, the brothers have continued building their reputation around traditional pizza-making techniques, quality ingredients, and their Italian heritage.
At Amano Pizza, every dish is made by hand and fresh to order. The pies are New York-style and built on 72-hour cold-fermented sourdough with classics like plain cheese and margherita in addition to some unique flavors such as pesto hot honey roni, chicken ranchero, and chicken caesar pizza.
The restaurant also has other Italian staples like calzones, paninis, heros, and pasta dishes. Information regarding what The Proof Pizza menu and hours will look like is yet to be announced.
The upcoming opening will give Wall Township residents a chance to experience the pizza-making expertise the brothers have developed through Amano Pizza.
