After spending time in New York apprenticing at a bakery in Red Hook, Brooklyn, he returned to Northern Virginia around 2004 and began building what would eventually become <a href=\"https:\/\/www.bakeshopva.com\/\" target=\"_blank\" rel=\"noopener\">Bakeshop<\/a>. At first, that meant baking from home, making deliveries, and trying to grow a customer base one order at a time. \u201cI started baking out of my mom\u2019s kitchen and doing deliveries,\u201d Justin said.<\/p>\n<p>He began by perfecting individual recipes, starting with chocolate chip cookies, then moving on to cakes, cupcakes, and other baked goods. The goal was simple: create the kind of bakery he wished existed locally when he was growing up. \u201cI was good at making things. I really liked to eat them,\u201d Justin said. \u201cThere weren\u2019t a lot of things around here that were for people that liked that kind of stuff. So I decided to just create it.\u201d<\/p>\n<p>The timing helped, too. Justin started building Bakeshop around the same time Yelp was becoming popular, and word of mouth began to spread online. Bakeshop\u2019s first storefront opened in 2010 at 1025 N. Fillmore Street in Arlington, a location Justin said felt natural to him. The second location <a href=\"https:\/\/patch.com\/virginia\/fallschurch\/bakeshop-opens-location-falls-church\" target=\"_blank\" rel=\"noopener\">opened in 2019<\/a> at 100 E. Fairfax Street in Falls Church, where the business grew in new ways, especially with breakfast.<\/p>\n<p>Now, the business is a family affair. Justin\u2019s wife, Mai, works full-time in the business and was key in getting the Vienna location designed and built. \u201cWe are a husband and wife team,\u201d Justin said. \u201cIt\u2019s been really lovely working with her.&#8221; During <em>The Fairfax Girl&#8217;s<\/em> pre-opening visit, Justin\u2019s mom, Linda, in whose kitchen the business was born, was at the Vienna shop hand-stamping shopping bags.<\/p>\n<h3>Vienna Expansion<\/h3>\n<p>Vienna had been on Justin\u2019s radar for years. When it came time to think about another Bakeshop location, Justin said the decision came down to timing and the right space. Falls Church came first, but Vienna was always a place Justin could picture the business growing into. \u201cI love the community aspect of it,\u201d Justin said. \u201cI like that it still looks the same way that it did when I was a kid. Skorpio\u2019s had been a Vienna staple for nearly 30 years, and residents were heartbroken when the Maggio family announced the restaurant\u2019s <a href=\"https:\/\/patch.com\/virginia\/vienna\/family-run-restaurant-says-farewell-new-owners-expected\" target=\"_blank\" rel=\"noopener\">closure in June 2024<\/a>.<br \/>\nJustin understood what it meant to take over such a well-known address. He said he was sad to see Skorpio&#8217;s go, but if the space was going to become something new, he hoped Bakeshop could honor the spirit of what had been there before. \u201cIt was an institution,\u201d Justin said. \u201cHopefully we\u2019ll end up filling the shoes of that institution.\u201d<\/p>\n<p style=\"text-align: center;\"><em><strong>Read more:&nbsp;<a href=\"https:\/\/thelocalgirl.com\/fairfax\/all-about-viennas-pear-tree-cottage\/\" target=\"_blank\" rel=\"noopener\">All About Vienna\u2019s Pear Tree Cottage<\/a><\/strong><\/em><\/p>\n<p>At first, imagining Bakeshop inside the space was not easy.&nbsp; \u201cWhen something like Skorpio&#8217;s has been there so long, it\u2019s hard to imagine anything else,\u201d Justin said. But as the space was gutted and the buildout began, the vision became clearer. Now, Justin feels like the team has nailed the look and feel of the new shop. \u201cI feel like we\u2019ve really nailed this one from a buildout,\u201d he said.<\/p>\n<h3>What to Expect at the Vienna Location<\/h3>\n<p>The Vienna Bakeshop will have the familiar items customers already love, plus some new additions specific to this location. Guests can expect coffee, sweets, cakes, cookies, breakfast sandwiches, and a full Bakeshop menu. Justin said this shop will also have more room for customers to sit, relax, and stay awhile compared to some of the other locations. \u201cThis one\u2019s got some space to sit down and relax and have a coffee, be with a friend, that kind of thing,\u201d he said.<\/p>\n<p>The menu will continue to evolve once the shop opens, something Justin said happens naturally at each location. Falls Church, for example, became especially breakfast-heavy because customers embraced that part of the menu. The Boston cream pie idea came from Justin&#8217;s friend in Vienna who regularly requests it as a birthday cake. There may also be a small nod to the building\u2019s Skorpios history. Justin said the team has talked about adding something gyro-inspired to the sandwich or breakfast sandwich menu.<\/p>\n<p>As for his own favorite menu items, Justin is a cookie person. Bakeshop often hires high school students, and he said he enjoys giving many of them their first job and helping them learn what it means to be part of a workplace and community.<\/p>\n<p>\u201cI really like to meet the new high school crop that we\u2019ll have in here,\u201d he said. Several alumni from other Bakeshop locations plan to be at the grand opening, which starts at 9AM on Saturday June 20th.
